We all know the city that never sleeps; the Big Apple, that exciting cosmopolitan city with it’s secret bars hidden in the alleyways of Upper State and Lower East Side New York. This was the experience Please Don’t Tell (PDT), a legendary speakeasy bar brought to Hong Kong at the MO Bar in the Landmark Mandarin Oriental Hotel from January 5 to 30. Collaboration with World Class, the founder, Jim Meehan along with Jeff Bell, a World Class U.S. Bar Tender resided in Hong Kong for one month to inspire the city’s bar scene. We helped design the menu and guests take home fur lined booklet inspired by the original book about the bar which included all the irresistible cocktail and hot dog recipes from the legendary barmen and guest HK Chefs behind the bar.
Among the drinks were 1-2 Punch and Benton’s Old Fashioned as well hot dogs the 'Frenchie' by Richard Ekkebus and the 'Demon Dog' created by Alvin Leung of Bo Innovation.
Here's the recipe of one of our favourite drinks.
BUTTER EM ‘UP
2 oz. Bulleit Rye Whiskey
.75 oz. Lime Juice
.5 oz. Bénédictine
.5 tsp. Apple Butter
Shake with ice, then fine-strain into a chilled coupe.
No garish.
Spiced apple butter brings out the fruity notes of the bold American whiskey in this autumnal variation upon the little-known classic Junior Cocktail.
